How to Make Amazing Flavored Water



While living in a healthy world, you do not have to suffer from a lack of amazing flavors. Actually, the more amazing flavor combinations you can cram into your life, the better. Given that thought, I have started making pitchers of flavored water.  

Making your own flavored water is inexpensive, easy, and quick. You throw the stuff together in five quick minutes, let it sit overnight, and then in the morning you have an amazing flavor festival! The next time you pass expensive flavored water at the store, just turn your nose up at it. It is not good for you and a waste of your money.

All you need to make your own is a pitcher, water, and fruits, vegetables, herbs, and even spices. My favorite combination is mint, basil, an orange and lots of ginger. I also like apple, sticks of cinnamon, orange and star anise. The only limits on this are your imagination, but I think kale flavored water would not be my favorite.

Simple directions

-          Make sure all your fruit, veggies and herbs are washed.

-          Slice the veggies and fruit thin.

-          Add to the pitcher with the herbs and spices.

-          Fill the rest of the way with water.

-          Place in the refrigerator overnight.

-          Enjoy the next day.

Eat Right with Rosemary Carrots! Recipe Included!

 
In the spirit of eating lighter, I have been eating more fruits and vegetables now than I have in years. It is a lot easier to eat right when you are consuming a pound or more of veggies a day and at least a pound of fruit. Some of you are thinking that does not sound like a lot, and some of you are wondering how I find room to eat anything else.
 
Some veggies I love eating raw and just as they are. One of my favorites is cucumber slices. Those are just epic. Cauliflower that is raw but dipped in my miso Dijon dressing makes my toes curl. Other veggies are a little better cooked. I like roasted cauliflower (have you noticed I love cauliflower?) I also love making large pots of all veggie soup. Those are great when I need something late at night that is warm, comforting, and low in calories.
 
Another quick and easy favorite of mine is rosemary carrots. This takes just 20 minutes to bake, and it is easy to throw in the oven when you are making other tasty foods. Best of all, this lets me use some of the metric ton of rosemary that is in my yard. I got a cute baby rosemary plant for our wedding, planted it, and now it is a monster!! I love it because it means these carrots are always easy to make.
 
When you need a nice side dish, or want to eat the whole thing like popcorn while you are watching a movie on Netflicks, this is a great option!!
 
Rosemary Carrots
Makes about 1 pound
 
1 pound of baby carrots
1 baking dish, either a 9 inch pie plate or 9X9 baking dish
3-4 sprigs of rosemary, 3-4 inches long
2 cups of water
1 cube of bouillon, enough to make 2 cups of broth
OR
2 cups of vegetable broth
 
Combine all ingredients and roast at 425 degrees for 20 minutes.
Yes, it is that easy.
Now eat and enjoy.
 
P.S You can use other herbs that you really like, too! These would be great with thyme, oregano, or you name it! Have fun!

Black Bean Veggie Soup with Recipe and Gossip!

About 7 years ago I started an amazing weight loss journey where I lost 50 pounds, and tons of my own self doubts. Was I pretty enough? Was I healthy enough? There was a bit of that, but the first time I felt confident, especially when I could buy jeans in the lowest numbers possible. In America, when you are a woman, being skinny equals winning, and I was winning.

 
When you least expect it in life, you hit those brick walls with your face, breaking bones and spewing blood. I had a health problem (non-diet related) I never thought that I would encounter, and boom! 10 pounds was back on. I had to buy more new jeans, and fold the ones I had bought in those precious low numbers away… temporarily. I would be back in them soon enough. I wasn’t. The first 10 pounds crept into another 10, and then three years later another deep depression was followed by another 5 pound weight gain. Maybe it was all the wine.

Now I am back to my old habits, which is really building in the fruits and vegetables. I aim for 2-3 pounds of veggies a day. Yes, you read that right. 2-3 POUNDS. I am also eating about 1.5 pounds of fruit a day, which is leaving my skin glowing. So how am I doing all of this? I thought I would start posting up some of my recipes, ideas, and ways of getting things done while building in the veggies, or saving time. Both help.

One of my favorite new recipes is this easy black bean soup that is light, easy, and goes together in no time. I even included a calorie count!!
 

Black Bean Veggie Soup

Makes 10 servings (1 cup each)

2 cans of black beans, 15 oz each, rinsed and drained
4 cups of water
2 cups of corn kernels
2 cubes of vegetable bouillon (each should make 1 cup)
4 medium to large roma tomatoes
2 cans of diced green chilies (4 oz each)
1 tablespoon of fresh Mexican oregano or 1 teaspoon of dried, crumbled
2 small chili peppers
2 bunches of green onions
½ bunch of cilantro, diced
½ cup of shredded Daiya cheddar cheese or other vegan cheese
 
Drain and rinse the black beans.
Add to a soup pot along with 4 cups of water and the vegetable bouillon cubes and corn.
Dice the roma tomatoes and add to the pot, with the diced green chilies.
Add the oregano if using dried oregano.
Heat to a boil and allow to cook until the tomatoes are starting to soften, about 5 minutes of simmering time.
Meanwhile, slice the chili peppers thinly.
Remove the roots from the green onions, slice, and add.
Mince the cilantro.
Mince the oregano if using fresh.
Remove the soup from the heat and stir in the fresh oregano, cilantro, green onions, Daiya and chili peppers.
Allow to steep for about 5 minutes, then serve.

 

I actually eat this 2 cups at a time, because that fills me up better. However, the information below is based on a 1 cup serving. That way, you can portion it how you like it.

 
1 cup is 150 calories, 7 grams of protein and 7 grams of fiber.

Seitan Dumpling Stew with RECIPE!


Food does not have to be pretty to taste damn good. This was never more true of the simple but delicious stew that I made yesterday. It is one of those things that you look at in the pot and raise an eyebrow, but after one taste Jason proclaimed it was the best that he ever tasted. The best part was it was super simple! I love things that taste great and are simple to make.

So here it is, my Seitan Dumpling Stew. All my fellow Hobbits (and everyone else) enjoy!!

Seitan Dumpling Stew

Serves 6

1 onion
6 stalks of celery
4-5 carrots
2 packages of ‘beef’ seitan, 8 oz each (I used Trader Joes Beefless Beef Strips)
1 white sweet potato, medium (about 8-12 oz)
8-10 cups of water
1 package (8 cubes) of No-Beef Bullion

1 cup of cornmeal
1 cup of all purpose flour
2 teaspoons of baking powder
1/2 teaspoon of salt
½ cup of vegan butter
1 cup of UNSWEETENED vegan milk

 
Dice the onion, celery, carrots and seitan.
Add to a pot over medium heat and cook until the onions are translucent.
Dice and add the sweet potato and water.
Turn heat to medium high and cover, waiting for it to boil.
In a clean bowl, combine the cornmeal, flour, salt and baking soda.
Add the milk to this mixture.
Once the soup is boiling, add the cornmeal dumplings by teaspoon fulls.
Cover pot, reduce heat back to medium and boil for 20 minutes.
Remove cover and enjoy.

The Muffin Addict and Oat Bran Muffins with a Recipe!


I created a monster. It happened one early Saturday when my friend Suzzi and I were out hitting yard sales and suddenly, we were both hungry! Luckily we were right by Trader Joes so I stopped by to get bran muffins. These were dense, bran-rific, and slightly sweet. I had them before, but after one bite, Suzzi was addicted. She passed that addiction onto her boyfriend Geoff, but that addiction comes with a hefty price tag. Seriously, those things are not cheap. Therefore, she said that since I created her madness, I come up with a version she could make.
I did. And I promised her the recipe in a blog. And then my life became insane.

Well, here it is. These bran muffins are not exactly like they are at Trader Joes, but they are awesome and tasty. They are also a lot less expensive. You’ll also notice that these are oat bran based. These are gluten free, and you can vary the berries.

Oatmeal Bran Muffins

Makes about 18 muffins

18 muffin papers
1-2 muffin tins (2 will make your life better)
1 ½ cups of vegan milk
1 tablespoon apple cider vinegar
1 teaspoon almond extract
1 cup of apple sauce
¾ cup oat bran
¾ cup rolled oats
2 tablespoons corn starch
1 cup of gluten free baking mix
1 teaspoon xantham gum
2 teaspoons baking powder
1 teaspoon baking soda
½ teaspoon salt
1 large apple, core removed, finely diced
1 cup berries, such as black berries, fresh

 
Preheat the oven to 400 degrees.
In a cup, combine the vegan milk and apple cider vinegar.
Set to the side.
In a bowl, combine the oat bran, rolled oats, corn starch, gluten free baking mix, xantham gum, baking powder, baking soda, and salt.
Stir until combined. Add the fruit and toss gently in the flour.
Add the vegan milk mixture and apple sauce.
Gently combine.
Spoon into muffin tins, filling each paper about 3/4ths full.
Bake 20 minutes, cool, and enjoy.

If someone can look you in the eye and tell you they don’t like whip cream, beware this person because they have no soul! Seriously, whip cream is one of those things that most of us have many fond memories of. When I was a chubby teenager, the very thought of a mound of fluffy white whip cream goodness melting into my hot chocolate was enough to make my toes curl (and then I wonder why I was chubby…) But when I became vegan I was worried that my days of having those happy whip cream moments were all behind me.
 

When I first discovered Soy Whip I was a college student. It was a financial commitment to buy a can, but it was SO worth it when I would get home from taking a stressful test, place a huge mound of whip cream on the back of my hand and eat it off (what? Less calories that way and more control than just squirting it in my mouth). Back then, the flavor was amazing and you could use it right out of the refrigerator.
 

Now, the flavor is still amazing. Soy whip is one of those products that mimics the non-vegan version perfectly. It is amazing and a half! However, in the last year especially I have to admit I have gotten very frustrated at how the product actually comes out of the can. In order to get it to work at all you have to take it out of the refrigerator about 15 minutes before you want to use it, and then try. If it does not come out, you have to wait some more. Calorie control? Maybe, because by the time you are done and can get some out, you’re over it. Unfortunately, sometimes it doesn’t work at all. You invest in a can and none comes out at all! This happened to us this thanksgiving. My wonderful mother-in-law got dairy whip cream for the family ‘muggles’ (non-vegans), and soy whip for us. Unfortunately, then none came out. Our desert was just berries, which was tasty, but we were pretty let down. I got another can after that, and only some came out before it just froze up.


I really hope that Soy Whip resolves the problems that they have with the can, because they flavor is amazing. But just know that it can be a frustrating adventure.

Baking Without Eggs, a Bad Kitty Tip!

Welcome to Tip Tuesday! Today I am in the process of baking more cookies than I have in decades. It is all for a good cause, which is supporting VegCo, the new vegan superstore which is going to open soon (hopefully in Phoenix). So far, my cookies have been tasty, a little rustic, and wonderful. But in the process, I developed my favorite way to replace an egg in baking to date. Best of all, it likely uses things that you already have around the house.

Just combine 1/4 cup of vegan milk with 1 tablespoon of cornstarch. Mix or whisk until slightly frothy. Use in place of 1 egg.

I have been using this all day and it works wonderfully! It is the best binder for baked goods, does not create an odd taste or texture, and is inexpensive.
